Story spoilers
The timid butler persona is a facade: Grell is actually a flamboyant death god with a cheerful, sadistic personality. She refers to herself with feminine pronouns, takes a strong interest in Sebastian, and wields a modified death scythe shaped like a chainsaw that can cut through a person's soul and memories.
